Rețeta lui chef Nicolai: file de biban cu legume

Te invităm în La Cantine de Nicolai, unul dintre cele mai bune restaurante cu specific franțuzesc din România.

Dacă ești pasionat de bucătărie, atunci cu siguranță nu ai ratat La Cantine de Nicolai. Iar dacă ai făcut-o până acum, merită să dai o fugă. Noi am mers într-o după amiază și am avut o experiență extrem de plăcută din toate punctele de vedere: ospătari zâmbitori, un bucătar jovial și extrem de talentat, preparate gustoase și un design ce creează un mediu perfect. Nicolai Tand, maramureșeanul care a stat mulți ani în Franța, unde a descoperit tainele unei bucătării extrem de speciale, nu e genul clasic de chef. Odată ce îi treci pragul restaurantului, te va întâmpina și va avea grijă să te simți bine. "Vreau ca cei care ajung La Cantine du Nicolai să se simtă bine. Atât îmi doresc, să existe o fuziune între mine și ei", ne-a spus chef Nicolai.

După ce ne-a demonstrat că poate fi o gazdă excelentă, ne-a arătat și talentele de bucătar, preparând un file de biban de mare cu legume. Rețeta cu precizie nu am putut să o luăm – evident, secretul bucătarului. Însă mai jos ai lista de ingrediente și modul de preparare.

Timp de preparare: 20 de minute

Ingrediente:

Un file de biban de mare
Sparanghel
Morcovi
Ridichi
Roşii Cherry
Ceapă verde
Usturoi
Dressing de oțet balsamic şi trufe

Mod de preparare

1. Fierbe fileul de biban timp de 7-8 minute în apă cu puţin ulei de măsline, sare şi piper. Acoperă recipientul cu folie din aluminiu. După ce apa dă în clocot, scoate peştele.
2. Curăţă morcovii şi sparanghelul. Fierbe legumele până devin ușor elastice, nu moi. Scoate-le din vas, dar pune-le în apă cu gheaţă, ca să îşi păstreze culoarea şi textura şi să rămână uşor crocante. Lasă-le câteva minute în gheaţă, apoi călește-le în foarte puţin ulei de măsline. În tigaie adaugă și usturoiul zdrobit uşor.
3. Taie restul legumelor crude în fâșii subțiri.
4. Așază totul în farfurie și adaugă dressingul.
